Description

Baked Feta Eggs with tomatoes, bell peppers, spinach, and a sprinkle of Mediterranean spices create a vibrant and comforting breakfast or brunch. Ingredients

2 cups cherry or grape tomatoes

1 red bell pepper, diced

½ small red onion, diced

3 cloves garlic, minced

8 ounces feta cheese

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon sea salt

½ teaspoon dried thyme

½ teaspoon ground black pepper

½ teaspoon red pepper flakes

1 cup chopped baby spinach

4 large eggs

Optional: chopped fresh basil or fresh chives for topping


Instructions

  1. Preheat oven to 400°F (200°C).
  2. For individual servings: Divide tomatoes, bell pepper, onion, garlic, and feta cheese into 4 oven-safe ramekins. Drizzle with 1 tablespoon olive oil over each.
    For one large dish: Combine tomatoes, bell pepper, onion, and garlic in the dish. Place feta in the center and drizzle olive oil over the veggies and feta.
  3. Mix oregano, salt, thyme, black pepper, and red pepper flakes in a small bowl. Sprinkle evenly over the feta and veggies.
  4. Bake for 25 minutes, then stir to combine the feta with the veggies.
  5. Add spinach and stir to mix evenly.
  6. Create wells in the center of each ramekin (or large dish) and crack an egg into each well.
  7. Return to the oven and bake for an additional 10 minutes, or until eggs reach desired doneness.
  8. Optional: Top with fresh basil or chives before serving.
  9. Serve with crusty bread, pita, or toast for dipping.

Notes

  • For a different flavor, swap spinach with kale or arugula.
  • Goat cheese can be substituted for feta for a creamier texture.
  • Add olives, capers, or more veggies like zucchini for a Mediterranean twist.
  • To make the eggs runnier, reduce the baking time after adding eggs
