Notes

  • Vegan Version: Replace the feta with a plant-based feta or creamy vegan cheese substitute to make this dish vegan-friendly.
  • Gluten-Free: Swap out the bow tie pasta for a gluten-free pasta of your choice.
  • Add Protein: For an added protein boost, toss in some grilled chicken, shrimp, or roasted chickpeas.
  • Spicy Twist: Add red pepper flakes to the tomatoes before baking for a bit of heat.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat in the microwave or on the stovetop. If the pasta looks dry, add a splash of olive oil or water to bring it back to its creamy consistency.
