Ingredients
1½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon vegetable oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon kosher salt
½ teaspoon black pepper
1 cup bang bang sauce, divided
2 tablespoons sesame oil, divided
4 large eggs, beaten
½ teaspoon kosher salt

1 large white onion, diced
¼ cup green onions, diced, plus extra for garnish
1 teaspoon garlic, minced
4 cups long-grain white rice, cooked and cooled (preferably day-old)
¼ cup unsalted butter, melted

2 tablespoons soy sauce
⅓ cup frozen peas
Instructions
- Toss the cubed chicken with vegetable oil, paprika, garlic powder, salt, and black pepper. Preheat the air fryer to 400°F and cook the chicken in a single layer for 11-12 minutes, flipping halfway through, until golden brown and cooked through. Set aside and cover with foil to keep warm.
- Heat 1 tablespoon of sesame oil in a large skillet over high heat. Add the beaten eggs, sprinkle with salt, and gently scramble until soft and fluffy. Remove the eggs from the skillet and set aside on a plate.
- Lower the heat to medium-high and add the remaining tablespoon of sesame oil to the skillet. Add the diced carrots, onion, and green onions. Cook for about 5 minutes, stirring, until the carrots are tender. Add minced garlic and cook for an additional minute until fragrant.
- Add the cooled rice to the skillet, breaking it up with a spatula. Stir the rice into the vegetables and cook for 2-3 minutes, allowing it to heat through and develop crispy edges.
- Add the scrambled eggs, melted butter, lemon juice, soy sauce, and frozen peas to the rice. Stir everything together and cook for an additional 2-3 minutes until well-mixed and hot.
- Toss the cooked chicken with ½ cup of the bang bang sauce until fully coated.
- Serve the fried rice topped with the sauced chicken. Drizzle with extra bang bang sauce if desired, and garnish with extra green onions.
