Description

Cowboy caviar is a colorful, flavor-packed dish that’s perfect for any occasion. A mix of beans, corn, fresh veggies, and a tangy dressing makes it a refreshing side, dip, or snack.


Ingredients

½ cup olive oil

½ cup vegetable oil

½ cup cider vinegar

½ cup white sugar

1 (14 ounce) can pinto beans, rinsed and drained

1 (14 ounce) can black-eyed peas, rinsed and drained

1 (11 ounce) can white shoepeg corn, drained

1 red onion, chopped

2 stalks celery, chopped

1 red bell pepper, chopped

½ cup chopped cilantro


Instructions

  1. In a small saucepan, combine the olive oil, vegetable oil, cider vinegar, and sugar. Bring to a boil, then remove from heat and let it cool to room temperature.
  2. In a large bowl, mix together the pinto beans, black-eyed peas, corn, onion, celery, red bell pepper, and cilantro until everything is evenly combined.
  3. Pour the cooled oil mixture over the bean mixture and toss well to coat.
  4. For best results, cover the bowl and refrigerate for a few hours or overnight, stirring occasionally.
  5. Drain excess dressing before serving. Best served chilled, and enjoy as a dip or side dish.
