Description
Crispy on the outside with a creamy, tangy blueberry and cream cheese filling on the inside, these Blueberry Cream Cheese Egg Rolls are a sweet, indulgent dessert.
Ingredients
2 cups fresh blueberries
⅓ cup sugar
1 tbsp lemon juice
7 tbsp water (divided)
3 tbsp cornstarch
8 oz cream cheese (room temperature)
⅓ cup sugar
1 tsp lemon juice
1 tsp vanilla extract
12 egg roll wrappers
2+ cups vegetable oil (for frying)
¼ cup powdered sugar (for dusting)
Instructions
- In a saucepan, combine blueberries, sugar, lemon juice, and 4 tbsp of water. Cook over medium heat until the blueberries burst and release their juices.
- Mix the remaining 3 tbsp of water with the cornstarch and add this mixture to the saucepan. Stir until the filling thickens, then remove from heat and let it cool completely.
- For the cream cheese filling, beat cream cheese, sugar, lemon juice, and vanilla extract together until smooth and creamy.
- To assemble, lay an egg roll wrapper flat. Spoon 1 tbsp of cream cheese filling and 1 tbsp of blueberry filling into the center of the wrapper. Roll tightly and seal the edges with a little water.
- Heat vegetable oil in a deep skillet to 350°F (175°C). Fry each egg roll for 2-3 minutes per side until golden brown and crispy.
- Drain the fried egg rolls on paper towels and dust with powdered sugar before serving.
Notes
- Substitute blueberries with other fruits like raspberries, blackberries, or strawberries for a different flavor.
- Add a chocolate drizzle for extra indulgence or sprinkle cinnamon sugar on the fried egg rolls for added sweetness.
- Frozen blueberries can be used; just thaw and drain before cooking.
- For a healthier version, you can use low-fat cream cheese and bake the egg rolls instead of frying them.
