Description

Crispy on the outside with a creamy, tangy blueberry and cream cheese filling on the inside, these Blueberry Cream Cheese Egg Rolls are a sweet, indulgent dessert.


Ingredients

2 cups fresh blueberries

⅓ cup sugar

1 tbsp lemon juice

7 tbsp water (divided)

3 tbsp cornstarch

8 oz cream cheese (room temperature)

⅓ cup sugar

1 tsp lemon juice

1 tsp vanilla extract

12 egg roll wrappers

2+ cups vegetable oil (for frying)

¼ cup powdered sugar (for dusting)


Instructions

  1. In a saucepan, combine blueberries, sugar, lemon juice, and 4 tbsp of water. Cook over medium heat until the blueberries burst and release their juices.
  2. Mix the remaining 3 tbsp of water with the cornstarch and add this mixture to the saucepan. Stir until the filling thickens, then remove from heat and let it cool completely.
  3. For the cream cheese filling, beat cream cheese, sugar, lemon juice, and vanilla extract together until smooth and creamy.
  4. To assemble, lay an egg roll wrapper flat. Spoon 1 tbsp of cream cheese filling and 1 tbsp of blueberry filling into the center of the wrapper. Roll tightly and seal the edges with a little water.
  5. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry each egg roll for 2-3 minutes per side until golden brown and crispy.
  6. Drain the fried egg rolls on paper towels and dust with powdered sugar before serving.

Notes

  • Substitute blueberries with other fruits like raspberries, blackberries, or strawberries for a different flavor.
  • Add a chocolate drizzle for extra indulgence or sprinkle cinnamon sugar on the fried egg rolls for added sweetness.
  • Frozen blueberries can be used; just thaw and drain before cooking.
  • For a healthier version, you can use low-fat cream cheese and bake the egg rolls instead of frying them.
