Blueberry Swirl Yogurt Bites are a refreshing, protein-rich frozen treat made with creamy Greek yogurt, sweet blueberry compote, and a hint of honey. Perfect for healthy snacking, they’re easy to prepare and full of flavor.
Ingredients
1 cup Greek yogurt (full-fat preferred)
½ cup blueberries (fresh or frozen)
2 tbsp honey or maple syrup
1 tsp lemon juice
½ tsp vanilla extract
1 tsp cornstarch (optional, for thicker compote)
Instructions
- In a small saucepan over medium heat, combine blueberries, honey, and lemon juice. Simmer for about 5 minutes until blueberries soften.
- If a thicker compote is desired, mix cornstarch with a bit of water and stir it into the compote. Let cool completely.
- In a bowl, whisk Greek yogurt and vanilla extract until smooth. Add a drizzle of honey if more sweetness is desired.
- Fill each cavity of a silicone mold or mini muffin tin about three-quarters full with the yogurt mixture.
- Spoon cooled blueberry compote on top of each and swirl gently with a toothpick for a marbled effect.
- Freeze for at least 3 hours or until fully set.
- Pop out the bites and store in an airtight container in the freezer. Let sit at room temperature for 2–3 minutes before serving.
