Description

Buckeye Bars are a no-bake dessert that combines the creamy richness of peanut butter with a glossy chocolate ganache. They’re simple to make and perfect for parties or personal indulgence.


Ingredients

8 tbsp salted butter, softened

3 cups creamy peanut butter

2 tsp vanilla extract

4 cups powdered sugar

12 oz semi-sweet chocolate chips

2 tbsp vegetable oil


Instructions

  1. In a large bowl, mix the softened butter, peanut butter, and vanilla extract until smooth and creamy.
  2. Gradually add the powdered sugar and mix until well combined.
  3. Press the peanut butter mixture into a parchment-lined 9×13 inch pan, spreading it evenly.
  4. For the chocolate ganache, melt the semi-sweet chocolate chips and vegetable oil together, stirring until smooth.
  5. Pour the chocolate ganache over the peanut butter layer and spread evenly.
  6. Chill the bars in the refrigerator for 15–20 minutes to allow the chocolate to set slightly.
  7. Once set, slice the bars into squares and chill for another 1½ hours before serving.

Notes

  • Add chopped peanuts or other nuts to the peanut butter layer for a crunchy texture.
  • Use dark chocolate chips instead of semi-sweet for a richer flavor.
  • Incorporate mini marshmallows for a fun, chewy twist.
