Buckeye Bars are a no-bake dessert that combines the creamy richness of peanut butter with a glossy chocolate ganache. They’re simple to make and perfect for parties or personal indulgence.
Ingredients
8 tbsp salted butter, softened
3 cups creamy peanut butter
2 tsp vanilla extract
4 cups powdered sugar
12 oz semi-sweet chocolate chips
2 tbsp vegetable oil
Instructions
- In a large bowl, mix the softened butter, peanut butter, and vanilla extract until smooth and creamy.
- Gradually add the powdered sugar and mix until well combined.
- Press the peanut butter mixture into a parchment-lined 9×13 inch pan, spreading it evenly.
- For the chocolate ganache, melt the semi-sweet chocolate chips and vegetable oil together, stirring until smooth.
- Pour the chocolate ganache over the peanut butter layer and spread evenly.
- Chill the bars in the refrigerator for 15–20 minutes to allow the chocolate to set slightly.
- Once set, slice the bars into squares and chill for another 1½ hours before serving.
Notes
- Add chopped peanuts or other nuts to the peanut butter layer for a crunchy texture.
- Use dark chocolate chips instead of semi-sweet for a richer flavor.
- Incorporate mini marshmallows for a fun, chewy twist.
- For a vegan version, substitute with dairy-free butter and chocolate chips.
