Description

Caramel Apple Eclair Cake is a no-bake dessert combining layers of creamy vanilla pudding, spiced cinnamon apples, graham crackers, and a sweet caramel topping. A simple and indulgent treat perfect for any occasion.


Ingredients

(20-ounce) cans apple pie filling (30 ounces in total)

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 box cinnamon graham crackers

2 (3.4-ounce) boxes instant vanilla pudding mix

2 cups cold milk

2 cups heavy cream

½ cup powdered sugar

1 teaspoon vanilla extract

Homemade caramel sauce, caramel dip, or store-bought caramel topping


Instructions

  1. Place the apple pie filling into a bowl. Use scissors to cut the apple pieces into smaller chunks. Add cinnamon and nutmeg to the apple pie filling and set it aside.
  2. In a separate large bowl, mix the instant vanilla pudding, cold milk, and powdered sugar. Add in the heavy cream and vanilla extract. Use a hand mixer to beat until the mixture becomes thick and creamy (about 3-4 minutes).
  3. In a 9×13-inch baking dish, lay down a single layer of cinnamon graham crackers. Spoon half of the apple pie filling over the graham crackers. Spoon half of the vanilla pudding mixture over the apple pie filling. Repeat the process with another layer of graham crackers, apple pie filling, vanilla pudding, and graham crackers.
  4. Heat the caramel topping in the microwave to make it pourable, then pour it over the top layer of graham crackers. Smooth it out evenly.
  5. Refrigerate the cake for at least 4-6 hours, though overnight chilling is recommended for the best results.

  • If you prefer a lighter version, substitute heavy cream with half-and-half or whole milk.
  • For a different twist, use peach or cherry pie filling instead of apple pie filling.
