Ingredients
For the salad:
6 medium carrots, peeled and shredded
1 large apple, grated or julienned
½ cup diced celery (optional)
For the dressing:
¾ cup plain yogurt (or Greek yogurt)
1 tsp honey or maple syrup
2 tbsp lemon juice
1 tbsp chopped parsley
Salt and pepper to taste
Instructions
- Peel and shred the carrots and apple using a box grater or food processor. Dice the celery if using.
- In a small bowl, whisk together the yogurt, honey, lemon juice, parsley, salt, and pepper.
- In a large bowl, toss the shredded carrots and apple (and celery, if using). Pour the dressing over and mix until well coated.
- Cover and refrigerate for at least 1 hour to allow the flavors to blend and the salad to firm up.
- Garnish with extra parsley or a sprinkle of seeds/nuts if desired. Serve and enjoy!
