Description
Cheeseburger Spring Rolls are a crispy, deep-fried treat that combines the juicy, savory flavors of a cheeseburger wrapped in a golden spring roll. Packed with minced beef, two kinds of cheese, pickled gherkins, and a tangy special sauce, these are a fun, flavorful twist on a classic cheeseburger.
Ingredients
500 g (1.1 lb) minced beef (12-15% fat, ideally, for juicy meat)
1 small onion, peeled and finely chopped
1/2 tsp salt
1/2 tsp black pepper
75 g (3/4 packed cup) strong cheddar cheese, grated
75 g (3/4 packed cup) red Leicestershire cheese, grated
2 tbsp finely chopped pickled gherkins (dill pickles, cornichons, or burger pickle slices)
12 spring roll wrappers
Oil for deep frying
Special sauce:
6 tbsp mayonnaise
6 tbsp tomato ketchup
1 tbsp mild yellow mustard
Instructions
- Heat a large frying pan over medium-high heat. Add the minced beef, onion, salt, and pepper, and fry for 6-7 minutes, breaking up the beef until browned and the onion softens.
- Turn off the heat and let the mixture cool for 20-30 minutes.
- While the beef cools, make the special sauce by mixing the mayonnaise, ketchup, and mustard in a small bowl. Set aside.
- Once the beef mixture has cooled, stir in the grated cheddar, red Leicestershire cheese, and chopped pickles.
- Heat oil in a heavy-based pan to 190°C (375°F) for deep frying.
- Place a spring roll wrapper with a corner pointing towards you. Place a heaped tablespoon of the beef mixture near the bottom corner, leaving about an inch of space. Shape the filling into a sausage shape.
- Roll the spring roll tightly, tucking in the outer edges before sealing with water on your fingers.
- Repeat with the remaining spring rolls.
- Carefully fry 6 spring rolls at a time for 3-4 minutes, turning occasionally, until golden brown.
- Remove the spring rolls and drain on kitchen roll to absorb excess oil.
- Serve the spring rolls hot with the special sauce for dipping.

Spicy Cheeseburger Spring Rolls: Add chopped jalapeños or hot sauce to the beef mixture.
Vegetarian Version: Replace minced beef with plant-based alternatives like tofu or mushrooms.
