Description

Cheesy Ranch Potatoes are a simple yet irresistible dish featuring roasted baby potatoes seasoned with ranch, garlic, and onion powder, then topped with melted cheddar cheese. Perfect as a side dish or snack, this flavorful recipe is sure to be a crowd-pleaser.

Ingredients

4 cups baby potatoes, halved or quartered

2 tablespoons olive oil

1 packet ranch seasoning mix (make sure it’s halal-certified)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1 1/2 cups shredded cheddar cheese (or a mix of your favorite cheeses)

1/2 cup sour cream (optional, for serving)

Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes and cut them in half or quarters to ensure they cook evenly and quickly.
  3. In a small bowl, mix together the ranch seasoning, garlic powder, onion powder, and black pepper.
  4. Place the halved potatoes in a large bowl. Drizzle with olive oil and sprinkle with half of the ranch seasoning mixture. Toss the potatoes until they’re evenly coated.
  5. Line a baking sheet with parchment paper or lightly grease it. Spread the seasoned potatoes on the baking sheet in a single layer, avoiding overcrowding.
  6. Roast the potatoes in the preheated oven for 35-40 minutes, or until golden brown and tender. Stir halfway through to ensure even cooking.
  7. Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese over the potatoes. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Garnish with freshly chopped parsley for color, and serve hot with a dollop of sour cream, if desired.

Notes

  • For extra crunch, coat the potatoes in a mix of Parmesan cheese and panko breadcrumbs before roasting.
  • For a spicy kick, add a pinch of cayenne pepper or chili flakes to the seasoning mix.
  • If you prefer a different cheese, try mozzarella, pepper jack, or Monterey Jack for a unique twist.
  • Adding roasted vegetables such as bell peppers, onions, or carrots is a great way to increase flavor and nutrition.
  • If you’re making it ahead, prepare and coat the potatoes the day before and refrigerate until you’re ready to bake.
