Ingredients
2 ¾ cups all-purpose flour
1 ½ teaspoons cream of tartar
1 teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
1 cup unsalted butter, room temperature
1 ½ cups granulated sugar
2 large eggs, room temperature
2 teaspoons pure vanilla extract
3 tablespoons granulated sugar (for topping)
1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat the oven to 350°F. Grease and flour a 9×13 baking pan or line it with parchment paper.
- In a large bowl, whisk together the flour, cream of tartar, baking soda, cinnamon, and salt. Set aside.
- Using a stand mixer or hand mixer, beat the butter and sugar on medium-high speed for about 3 minutes until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture, beating until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Transfer the dough into the prepared baking pan and press it down evenly.
- In a small bowl, whisk together the sugar and cinnamon for the topping. Sprinkle the cinnamon sugar evenly over the dough.
- Bake for 25-28 minutes, or until the edges are set and the center is still soft. Be careful not to overbake.
- Allow the bars to cool completely in the pan before cutting and serving.
Notes
- Store the bars in an airtight container at room temperature for up to 5 days.
- To freeze, wrap the cooled bars (whole or cut) tightly in plastic wrap and aluminum foil. Freeze for up to 3 months and defrost in the refrigerator before serving.
- You can refrigerate the dough for up to 48 hours before baking if needed.
- For frosting, cream cheese or buttercream frosting pairs wonderfully with these bars.
