Description

Chewy snickerdoodle bars are the ultimate treat for anyone who loves the classic snickerdoodle cookie. Ingredients

2 ¾ cups all-purpose flour

1 ½ teaspoons cream of tartar

1 teaspoon baking soda

½ teaspoon ground cinnamon

½ teaspoon salt

1 cup unsalted butter, room temperature

1 ½ cups granulated sugar

2 large eggs, room temperature

2 teaspoons pure vanilla extract

3 tablespoons granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)


Instructions

  1. Preheat the oven to 350°F. Grease and flour a 9×13 baking pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, cream of tartar, baking soda, cinnamon, and salt. Set aside.
  3. Using a stand mixer or hand mixer, beat the butter and sugar on medium-high speed for about 3 minutes until light and fluffy.
  4. Add the eggs and vanilla extract to the butter mixture, beating until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Transfer the dough into the prepared baking pan and press it down evenly.
  7. In a small bowl, whisk together the sugar and cinnamon for the topping. Sprinkle the cinnamon sugar evenly over the dough.
  8. Bake for 25-28 minutes, or until the edges are set and the center is still soft. Be careful not to overbake.
  9. Allow the bars to cool completely in the pan before cutting and serving.

Notes

  • Store the bars in an airtight container at room temperature for up to 5 days.
  • To freeze, wrap the cooled bars (whole or cut) tightly in plastic wrap and aluminum foil. Freeze for up to 3 months and defrost in the refrigerator before serving.
  • You can refrigerate the dough for up to 48 hours before baking if needed.
  • For frosting, cream cheese or buttercream frosting pairs wonderfully with these bars.
