1 teaspoon cornstarch

¼ cup light soy sauce

1 teaspoon sesame oil

2 teaspoons sugar (or honey)

1 tablespoon rice wine vinegar (optional)

For the Stir Fry:

1 lb boneless chicken thighs, cut into bite-sized pieces

3 cloves garlic, smashed

1 tablespoon cooking oil

1 medium zucchini, cut in half lengthwise and then sliced

1 tablespoon oyster sauce

Ground black pepper, optional


Instructions

  1. Marinate the Chicken:
    Cut the chicken into bite-sized pieces. In a mixing bowl, combine the marinade ingredients: cornstarch, soy sauce, sesame oil, sugar, and rice wine vinegar (if using). Add the chicken pieces to the marinade, combine well, and set aside to marinate for about 30 minutes.
  2. Stir Fry the Chicken:
    In a pan or wok, heat the cooking oil over medium-high heat. Add the garlic and marinated chicken along with the marinade sauce. Stir-fry for about 2 minutes, or until the chicken is no longer translucent. Remove the chicken from the pan and set it aside, keeping the sauce in the pan.
  3. Stir Fry the Zucchini:
    If the pan is too dry, add a little more cooking oil. Add the sliced zucchini to the pan and stir-fry for about 5 minutes, or until the zucchini starts to become tender.
  4. Combine and Finish:
    Return the chicken to the pan with the zucchini. Add the oyster sauce and sprinkle with ground black pepper (optional). Stir-fry everything together for about 2-3 minutes, or until the chicken is cooked thoroughly and the zucchini is tender.
  5. Serve:
    Remove from heat and serve immediately with your choice of rice or noodles.

Notes

  • You can customize this stir fry by adding other vegetables like bell peppers, onions, or carrots for more color and crunch.
  • If you like spice, add chili flakes or fresh chilies for some heat.
  • For a gluten-free version, use tamari instead of soy sauce.
  • Marinating the chicken ahead of time will enhance the flavors, and you can store the marinated chicken in the fridge for up to 24 hours.
