3 cloves garlic, smashed
1 tablespoon cooking oil
1 medium zucchini, cut in half lengthwise and then sliced
1 tablespoon oyster sauce

Instructions
- Marinate the Chicken:
Cut the chicken into bite-sized pieces. In a mixing bowl, combine the marinade ingredients: cornstarch, soy sauce, sesame oil, sugar, and rice wine vinegar (if using). Add the chicken pieces to the marinade, combine well, and set aside to marinate for about 30 minutes. - Stir Fry the Chicken:
In a pan or wok, heat the cooking oil over medium-high heat. Add the garlic and marinated chicken along with the marinade sauce. Stir-fry for about 2 minutes, or until the chicken is no longer translucent. Remove the chicken from the pan and set it aside, keeping the sauce in the pan. - Stir Fry the Zucchini:
If the pan is too dry, add a little more cooking oil. Add the sliced zucchini to the pan and stir-fry for about 5 minutes, or until the zucchini starts to become tender. - Combine and Finish:
Return the chicken to the pan with the zucchini. Add the oyster sauce and sprinkle with ground black pepper (optional). Stir-fry everything together for about 2-3 minutes, or until the chicken is cooked thoroughly and the zucchini is tender. - Serve:
Remove from heat and serve immediately with your choice of rice or noodles.
