Ingredients
2 ¼ cups (280 g) unbleached all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¾ cup (170 g) unsalted butter, melted and slightly cooled
1 cup (200 g) packed light brown sugar
½ cup (100 g) granulated sugar
1 large egg, room temperature
1 egg yolk, room temperature
2 teaspoons pure vanilla extract
1 ½ cups (260 g) semisweet chocolate chips
Vanilla ice cream, for serving
Instructions
- Preheat your oven to 350℉. Lightly grease a 10-inch or 12-inch cast iron skillet with butter or cooking spray. Set aside.
- In a separate bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a stand mixer (or using a hand mixer), beat the melted butter, brown sugar, and granulated sugar on medium-high speed until light in color, about 2 minutes.
- Add the egg, egg yolk, and vanilla, mixing until well combined. Scrape down the sides of the bowl as necessary.
- Add the dry ingredients to the wet ingredients, mixing just until combined. Stir in the chocolate chips by hand.
- Transfer the dough into the prepared skillet, pressing it into an even layer.
- Bake for 20-25 minutes, or until the edges are golden and the center is soft but set.
- Cool for 15 minutes, then top with vanilla ice cream and optional toppings like caramel sauce or a sprinkle of sea salt.
Notes
- Use different types of chocolate chips such as milk chocolate, white chocolate, or peanut butter chips for variety.
- Add mix-ins like chopped nuts, toffee bits, or M&M’s for extra flavor and texture.
- For a nutty flavor, try browning the butter before adding it to the dough.
- Make mini skillet cookies by dividing the dough into smaller portions and baking for 10-15 minutes.
- Store any leftovers at room temperature in an airtight container for up to 1 week, or freeze for up to 3 months.
