Description

These homemade chocolate chip cookie ice cream sandwiches, also known as Chipwiches, are the perfect summer dessert. Ingredients

1 ¼ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

7 tablespoons unsalted butter, room temperature

⅔ cup light brown sugar, packed

¼ cup granulated sugar

1 large egg, room temperature

1 teaspoon pure vanilla extract

1 cup mini chocolate chips (for dough)

½ gallon vanilla ice cream (homemade or store-bought)

1 cup mini chocolate chips (for sandwich edges)


Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  2. In a stand mixer, beat the butter, brown sugar, and granulated sugar on medium-high until light and fluffy (about 4 minutes). Add the egg and vanilla, mixing until combined.
  3. Gradually add the flour mixture to the wet ingredients. Mix just until combined. Stir in the mini chocolate chips by hand.
  4. Scoop about 2 tablespoons of dough, roll into a ball, and place on the prepared baking sheet. Gently press down on each ball to flatten slightly. Bake for 10 to 12 minutes or until the edges turn light brown.
  5. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Once completely cooled, place the cookies in the freezer for 20 to 30 minutes to firm up.
  6. Scoop about ¼ cup of softened vanilla ice cream onto the flat side of one frozen cookie. Top with another cookie and press gently to sandwich the ice cream. Roll the edges of the sandwich in mini chocolate chips.
  7. Serve immediately or wrap each sandwich in plastic wrap and freeze until ready to enjoy.
