Description

Country Apple Fritter Bread is a delicious combination of sweet, spiced apples and soft, buttery bread, perfect for breakfast, a snack, or dessert. This easy-to-make treat is sure to impress everyone.

Ingredients

For the Bread: 1/3 cup light brown sugar, 1 tsp ground cinnamon, 2/3 cup white sugar (or coconut sugar), 1/2 cup butter (or coconut oil), softened, 2 eggs (or flax eggs for vegan), 1 1/2 tsp vanilla extract, 1 1/2 cups all-purpose flour (or gluten-free flour blend), 1 3/4 tsp baking powder

For the Apple Filling: 2 cups chopped apples (peeled and cored; Granny Smith or Honeycrisp), 1 tsp lemon juice

Optional: Chopped nuts (walnuts or pecans), crumble topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, toss the chopped apples with lemon juice to prevent browning. Set aside.
  3. In a separate bowl, whisk together the flour, baking powder, light brown sugar, cinnamon, and white sugar.
  4. Cream the softened butter and sugars together until light and fluffy. Add the eggs and vanilla extract, and mix until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing.
  6. Gently fold in the prepared apple filling, ensuring the apple pieces are evenly distributed throughout the batter.
  7. Pour the batter into the greased loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve warm.
