Ingredients
3 tablespoons unsalted butter

1 cup heavy whipping cream
8 ounces crab meat
4 to 8 ounces small cooked shrimp or other seafood
2 tablespoons sherry wine
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped green onion and celery, cooking until softened, about 3 minutes.
- Stir in the flour and cook for 2 minutes, forming a roux.
- Gradually whisk in the milk, ensuring there are no lumps. Bring to a simmer.
- Stir in the tomato paste, heavy cream, and black pepper. Simmer for 5 minutes.
- Gently fold in the crab meat and shrimp. Cook for an additional 5 minutes until heated through.
- Stir in the sherry wine and cook for 2 more minutes.
- Ladle the bisque into bowls and garnish with fresh herbs, if desired.

- Add a pinch of cayenne pepper or a dash of hot sauce for some heat.

- For a low-carb version, replace flour with xanthan gum.
