Description
This dish is a rich, creamy spaghetti tossed with tender Cajun-seasoned chicken, all coated in a luscious garlic mozzarella sauce. It’s indulgent comfort food with a spicy kick.
Ingredients
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
2 Tbsp olive oil
1 lb spaghetti
4 Tbsp butter
3 cups whole milk
1 cup chicken broth
8 oz cream cheese, softened
2 cups shredded mozzarella cheese, divided
½ cup grated Parmesan cheese
Cajun seasoning, to taste
Salt and pepper, to taste
Instructions
- Season chicken pieces with Cajun seasoning.
- Heat olive oil in a skillet over medium-high heat. Cook chicken until browned and fully cooked. Set aside.
- Cook spaghetti in a large pot of salted boiling water until al dente. Drain and set aside.
- In the same skillet used for chicken, melt butter. Add milk, chicken broth, and softened cream cheese. Stir until the mixture is smooth and combined.
- Add 1 cup of shredded mozzarella and the Parmesan cheese. Stir until melted and creamy.
- Return the cooked chicken to the skillet and mix well with the sauce.
- Add cooked spaghetti to the skillet. Toss to coat in the sauce.
- Stir in the remaining 1 cup mozzarella until melted and evenly distributed.
- Adjust seasoning with salt, pepper, and additional Cajun seasoning if desired. Serve immediately.
Notes
- Swap chicken for shrimp or smoked sausage for a different flavor profile.
- Use creole seasoning for a milder spice.
- Stir in diced bell peppers, onions, or tomatoes for added texture and nutrition.
