Description

This dish is a rich, creamy spaghetti tossed with tender Cajun-seasoned chicken, all coated in a luscious garlic mozzarella sauce. It’s indulgent comfort food with a spicy kick.


Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 Tbsp olive oil

1 lb spaghetti

4 Tbsp butter

3 cups whole milk

1 cup chicken broth

8 oz cream cheese, softened

2 cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

Cajun seasoning, to taste

Salt and pepper, to taste


Instructions

  1. Season chicken pieces with Cajun seasoning.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken until browned and fully cooked. Set aside.
  3. Cook spaghetti in a large pot of salted boiling water until al dente. Drain and set aside.
  4. In the same skillet used for chicken, melt butter. Add milk, chicken broth, and softened cream cheese. Stir until the mixture is smooth and combined.
  5. Add 1 cup of shredded mozzarella and the Parmesan cheese. Stir until melted and creamy.
  6. Return the cooked chicken to the skillet and mix well with the sauce.
  7. Add cooked spaghetti to the skillet. Toss to coat in the sauce.
  8. Stir in the remaining 1 cup mozzarella until melted and evenly distributed.
  9. Adjust seasoning with salt, pepper, and additional Cajun seasoning if desired. Serve immediately.
