Description

This creamy spinach recipe combines tender spinach, earthy mushrooms, and a luscious white sauce to create a comforting and flavorful dish. Perfect as a side or light main course, it’s simple to make and bursting with savory goodness.

Ingredients

1 bunch of spinach

1/2 onion, finely chopped

1 cup milk

2 tbsp cake flour

1 tsp minced garlic

1 tsp stock powder (vegetable curry flavor)

1/2 cup mushrooms, sliced

2 tbsp butter

Salt and pepper to taste

Instructions

  1. Steam the spinach for 2 minutes, drain, and set aside.
  2. In a large pan, melt the butter over medium heat.
  3. Add the finely chopped onion and minced garlic, cooking until the onion becomes soft and translucent.
  4. Stir in the sliced mushrooms and cook until they become delicate and tender.
  5. Add the cake flour to the pan and stir well to combine. Let it cook for about 1 minute to form a roux.
  6. Gradually pour in the milk, stirring continuously until the mixture thickens into a creamy white sauce.
  7. Season with salt and pepper to taste.
  8. Add the steamed spinach to the white sauce and sprinkle the stock powder over it, stirring gently to combine.
  9. Serve and enjoy!

Notes

  • For a cheesier version, stir in some grated Parmesan or cheddar cheese when the white sauce is thickening.
  • Use plant-based butter and milk for a dairy-free version of this dish.
  • Add chili flakes or cayenne pepper for a spicy kick.
  • Consider adding cooked chicken for a more filling meal.
  • To make this recipe vegan, use dairy-free milk, vegan butter, and vegan stock powder or omit it entirely.
