Ingredients
20 ounces refrigerated cheese tortellini
2 tablespoons butter (salted or unsalted)
3 tablespoons all-purpose flour
3 cloves garlic, minced
1 teaspoon onion powder
1 1/2 cups milk
1/2 cup heavy whipping cream
15 ounce can petite diced tomatoes
1 1/2 cups baby spinach leaves, chopped
1/4 cup fresh basil leaves, chopped
1/2 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
1/2 cup freshly grated parmesan cheese, plus more for serving
Crushed red pepper flakes, for serving (optional)
Instructions
- Cook the tortellini according to the package instructions. Drain and set aside.
- In a large saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes until it forms a roux.
- Add the minced garlic and onion powder, and cook for an additional 30 seconds.
- Slowly pour in the milk and heavy cream while whisking to ensure a smooth consistency. Continue cooking, stirring constantly, until the mixture starts to simmer.
- Add the diced tomatoes, spinach, basil, and oregano to the pan. Taste and season with salt and pepper. Adjust seasonings as desired.
- Stir in the parmesan cheese and cook until melted and smooth.
- Remove from heat and gently stir in the cooked tortellini until well-coated.
- Serve warm with extra parmesan cheese and a sprinkle of crushed red pepper flakes, if desired.
