Description

Ingredients

1 cup cooked quinoa

1 cup dark chocolate chips (at least 70% cocoa)

1/2 cup almond butter

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup chopped nuts (optional)

1/4 cup dried fruit (optional)


Instructions

  1. In a large mixing bowl, combine the cooked quinoa, almond butter, honey (or maple syrup), vanilla extract, and sea salt. Stir until well mixed and sticky.
  2. In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring after each. Allow it to cool slightly before adding to the quinoa mixture.
  3. Pour the melted chocolate over the quinoa mixture and stir until fully combined. Optionally, fold in chopped nuts or dried fruit.
  4. Line a baking sheet with parchment paper and drop spoonfuls of the quinoa mixture, flattening them slightly into discs.
  5. Refrigerate for at least 30 minutes to set the chocolate and firm up the crisps.
  6. Once set, remove from the fridge. Enjoy immediately or store in an airtight container in the refrigerator.
