Ingredients

1 tablespoon unsalted butter (for greasing pan)

5 cups (30 oz) fresh blueberries (or defrosted frozen blueberries)

¼ cup (50 g) granulated sugar

2 tablespoons all-purpose flour

2 teaspoons fresh lemon juice

1 teaspoon fresh lemon zest

1 cup (80 g) old-fashioned rolled oats

½ cup (67 g) all-purpose flour

½ cup (100 g) light brown sugar

¼ cup (50 g) granulated sugar

¼ teaspoon ground cinnamon

Pinch of salt

½ cup (113 g) unsalted butter, cold and cut into cubes

Vanilla ice cream (for serving)


Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 2-quart baking dish (or a 10-inch skillet) with butter.
  2. In a large bowl, combine the blueberries, granulated sugar, all-purpose flour, lemon juice, and lemon zest. Stir until the berries are evenly coated.
  3. In a separate bowl, whisk together the rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt.
  4. Add the cold butter cubes to the dry ingredients. Use a pastry cutter (or two forks) to cut the butter into the mixture until it forms coarse crumbs.
  5. Transfer the blueberry mixture into the prepared baking dish and evenly sprinkle the oat topping over the top.
  6. Bake in the preheated oven for 30-40 minutes or until the topping is golden brown and the berries are bubbling.
