These Easy Breakfast Potatoes are the perfect crispy yet tender side dish to elevate your morning meal. Ingredients

4 potatoes, cut into ½” cubes

¼ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon garlic powder

¼ teaspoon onion powder

1 tablespoon butter

1 tablespoon oil

1 tablespoon chopped fresh parsley (or ½ teaspoon dried parsley)


Instructions

  1. Cut potatoes into ½” cubes.
  2. Heat a skillet over medium-high heat, adding butter and oil.
  3. Add the potatoes to the skillet and toss to coat in the butter and oil mixture. Sprinkle with salt, pepper, garlic powder, and onion powder.
  4. Cover the skillet and steam the potatoes for 3-4 minutes.
  5. Remove the lid and stir the potatoes. Continue cooking, stirring occasionally, until the potatoes are golden and crispy on the outside, soft on the inside.
  6. Sprinkle with fresh parsley and serve.

Notes

  • For extra crispiness, stir the potatoes occasionally, and increase the heat slightly in the final minutes of cooking.
