Ingredients
5 cups fresh cherries, stems and pits removed
¼ cup (50 g) granulated sugar (for filling)
1 cup (125 g) all-purpose flour
2 tablespoons cornmeal
¼ cup (50 g) granulated sugar (for topping), plus 2 teaspoons for sprinkling
1 ¾ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
¼ cup (56 g) unsalted butter, melted and slightly cooled
⅓ cup (80 ml) buttermilk, room temperature
½ teaspoon pure vanilla extract
¼ teaspoon ground cinnamon (for topping)
Vanilla ice cream (optional, for serving)
Instructions
- Preheat the oven to 425°F (220°C). Grease a 2-quart square baking dish and set it aside.
- For the filling, toss the fresh cherries with ¼ cup granulated sugar and place them in the prepared baking dish. Bake for 10 minutes to soften the cherries.
- While the cherries bake, prepare the topping. In a large bowl, whisk together the flour, cornmeal, ¼ cup sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the melted butter, buttermilk, and vanilla extract.
- Once the cherries have baked, remove them from the oven. Add the wet ingredients to the dry ingredients and stir until just combined.
- Scoop heaping tablespoonfuls of the dough, roll them into balls, and lightly press them into discs. Arrange the discs on top of the hot cherry filling.
- Sprinkle the top with 2 teaspoons of sugar and a little cinnamon.
- Bake for 20 minutes or until the biscuit topping is golden brown and the filling is bubbling. Let it cool for 15 minutes before serving warm, optionally with vanilla ice cream.

- You can substitute fresh cherries with frozen cherries, just be sure to thaw and drain them before use.
