Description

Easy Homemade Crispy Nacho Egg Rolls combine cheesy nachos and crispy egg rolls in a fun and flavorful snack. Filled with seasoned meat, melty cheese, and fresh veggies, they are perfect for parties, game days, or a quick, tasty treat.


Ingredients

1 lb ground beef or ground turkey

1 packet taco seasoning (or 2 tablespoons homemade)

1/2 cup water

1 cup shredded cheddar or Mexican-blend cheese

1/2 cup diced tomatoes (drained, optional)

1/4 cup sliced jalapeños (optional)

1/4 cup chopped green onions or red onions

1214 egg roll wrappers

Oil for frying (vegetable or canola)

Optional for Serving: Sour cream, guacamole, salsa or queso, chopped cilantro


Instructions

  1. Cook the Meat: In a skillet over medium heat, brown the ground beef or turkey. Drain any excess grease, then add taco seasoning and water. Let the mixture simmer for about 5 minutes until it thickens. Allow it to cool slightly.
  2. Assemble the Egg Rolls: Place an egg roll wrapper on a clean surface, with a corner facing you in a diamond shape. Add about 2 tablespoons of the seasoned meat mixture to the center. Top with cheese, diced tomatoes, jalapeños, and onions. Fold the bottom corner over the filling, then fold in the sides and roll up tightly, sealing the edge with a bit of water. Repeat with the remaining wrappers.
  3. Fry the Egg Rolls: Heat 2–3 inches of oil in a deep skillet or saucepan to 350°F (175°C). Fry the egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy. Drain on paper towels.
  4. Serve: Serve the hot egg rolls with your favorite dips such as sour cream, salsa, or guacamole.

  • For a vegetarian version, swap the meat for black beans or refried beans, and add extra veggies like bell peppers or corn.
