Description

Deliciously saucy and packed with flavor, these easy vegan ramen noodles come together quickly for a satisfying meal. Perfect for a cozy lunch or dinner, this recipe is simple, healthy, and customizable.


Ingredients

2 packs instant ramen noodles (discard seasoning packets)

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp sesame oil

1 tbsp maple syrup or agave nectar

1 tbsp rice vinegar

2 cloves garlic, minced

1 tsp fresh ginger, grated

1/4 tsp red pepper flakes (optional)

2 green onions, sliced

1 cup mixed vegetables (e.g., shredded carrots, bell peppers, snap peas)

Sesame seeds (optional, for garnish)


Instructions

  1. Cook the ramen noodles according to package instructions, drain, and set aside.
  2. In a small bowl, whisk together soy sauce, sesame oil, maple syrup, rice vinegar, minced garlic, grated ginger, and red pepper flakes.
  3. In a large skillet or wok, sauté the mixed vegetables over medium-high heat until tender-crisp, about 3-5 minutes.
  4. Add the cooked noodles to the skillet and pour the sauce over them. Toss everything together to coat the noodles and vegetables evenly with the sauce.
  5. Cook for another 1-2 minutes until everything is heated through.
  6. Remove from heat and garnish with sliced green onions and sesame seeds if desired. Serve immediately.

  • Feel free to swap in any vegetables you have on hand.
  • Add tofu or tempeh for extra protein if you like.
