Description
Flavorful Cucumber Couscous Salad is a refreshing and light dish made with couscous, crisp cucumber, juicy tomatoes, and creamy feta cheese, all tossed together in a zesty lemon dressing. Perfect for any occasion, it’s quick, easy, and packed with flavor.
Ingredients
1 cup couscous
1 1/4 cups vegetable broth
1 medium cucumber, diced
1 cup cherry tomatoes, halved
1/4 red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup feta cheese, crumbled
3 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
- In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes to absorb the broth. Fluff with a fork and set aside to cool.
- In a large mixing bowl, combine diced cucumber, halved cherry tomatoes, chopped red onion, parsley, and crumbled feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper to make the dressing.
- Add the cooled couscous to the vegetable mixture. Pour the dressing over the top and toss gently to combine.
- Refrigerate the salad for at least 30 minutes to allow the flavors to meld together. Toss again before serving.
Notes
- Add grilled chicken, chickpeas, or shrimp for a protein boost.
- Swap couscous with quinoa or farro for a different texture.
- For a vegan option, omit the feta and use avocado for creaminess.
- Add bell peppers, zucchini, or carrots for extra crunch.
- This salad is great for meal prep. Keep the dressing separate to prevent wilting.
