Description

Fresh Raspberry Tiramisu is a refreshing twist on the traditional Italian dessert, featuring creamy mascarpone, espresso-soaked ladyfingers, and vibrant raspberries. Ingredients

1 cup fresh raspberries

1 cup mascarpone cheese

1 cup heavy cream

¼ cup powdered sugar

1 teaspoon vanilla extract

½ cup brewed espresso, cooled

24 ladyfingers

2 tablespoons raspberry jam

2 tablespoons cocoa powder (for dusting)

Extra fresh raspberries for garnish


Instructions

  1. Prepare the Raspberry Mixture: In a medium bowl, combine fresh raspberries and raspberry jam. Gently mash with a fork, leaving some whole pieces for texture. Set aside.
  2. Make the Mascarpone Filling: In a large bowl, whisk together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
  3. Prepare the Espresso Mixture: In a shallow dish, combine cooled espresso.
  4. Assemble the Tiramisu: Quickly dip each ladyfinger into the espresso mixture, ensuring they’re soaked but not soggy. Arrange a layer of dipped ladyfingers at the bottom of a serving dish.
  5. Layer the Mascarpone Filling: Spread half of the mascarpone mixture over the ladyfingers.
  6. Add the Raspberry Mixture: Spoon half of the raspberry mixture over the mascarpone layer.
  7. Repeat the Layers: Add another layer of dipped ladyfingers, followed by the remaining mascarpone mixture, and top with the remaining raspberry mixture.
  8. Chill and Serve: Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight. Before serving, dust with cocoa powder and garnish with fresh raspberries.
