Ingredients
1 cup fresh raspberries
1 cup mascarpone cheese
1 cup heavy cream
¼ cup powdered sugar
1 teaspoon vanilla extract
½ cup brewed espresso, cooled
24 ladyfingers
2 tablespoons raspberry jam
2 tablespoons cocoa powder (for dusting)
Extra fresh raspberries for garnish
Instructions
- Prepare the Raspberry Mixture: In a medium bowl, combine fresh raspberries and raspberry jam. Gently mash with a fork, leaving some whole pieces for texture. Set aside.
- Make the Mascarpone Filling: In a large bowl, whisk together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
- Prepare the Espresso Mixture: In a shallow dish, combine cooled espresso.
- Assemble the Tiramisu: Quickly dip each ladyfinger into the espresso mixture, ensuring they’re soaked but not soggy. Arrange a layer of dipped ladyfingers at the bottom of a serving dish.
- Layer the Mascarpone Filling: Spread half of the mascarpone mixture over the ladyfingers.
- Add the Raspberry Mixture: Spoon half of the raspberry mixture over the mascarpone layer.
- Repeat the Layers: Add another layer of dipped ladyfingers, followed by the remaining mascarpone mixture, and top with the remaining raspberry mixture.
- Chill and Serve: Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight. Before serving, dust with cocoa powder and garnish with fresh raspberries.
