Description

Frozen Greek Yogurt Peanut Butter Bites are the perfect combination of creamy Greek yogurt and peanut butter, topped with a layer of rich chocolate. These easy-to-make frozen bites are a delicious and healthier alternative to traditional desserts, and they are perfect for when you’re craving something sweet yet satisfying.

Ingredients

2 tablespoons unsalted butter, softened

1 tablespoon granulated sugar

2 tablespoons brown sugar

1 tablespoon milk or cream

1/4 teaspoon vanilla extract

Pinch of salt

3 tablespoons all-purpose flour (heat-treated)

12 tablespoons mini chocolate chips (or more, to taste)

Instructions

  1. Line a baking sheet or tray with parchment paper. Ensure it fits comfortably in your freezer.
  2. In a medium mixing bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir until the mixture is smooth and well combined.
  3. Fold in the mini chocolate chips or chopped dark chocolate until evenly distributed.
  4. Using a tablespoon measure or small cookie scoop, drop portions of the mixture onto the prepared tray. Space them about an inch apart.
  5. If desired, use the back of a spoon dipped in warm water to smooth the tops of each bite.
  6. Place the tray in the freezer and freeze for 1–2 hours, or until the bites are firm to the touch.
  7. Once frozen, transfer the bites to an airtight container or zip-top bag, separating layers with parchment paper to prevent sticking. Store in the freezer until ready to enjoy.

Notes

  • Swap peanut butter for almond, cashew, or sunflower seed butter for a different flavor.
  • Use maple syrup, honey, or a sugar substitute like stevia or monk fruit to adjust sweetness.
  • For added texture and nutrition, incorporate chia seeds, ground flaxseed, or chopped nuts.
  • Add a pinch of cinnamon or a splash of almond extract for a unique flavor enhancement.
