Description

Ingredients

to 2 lbs beef tips (cut into 1-inch chunks)

3 tablespoons olive oil

1/3 cup all-purpose flour

1 diced onion

2 tablespoons minced garlic

1/4 cup Worcestershire sauce

1/2 cup dry red wine

1 tablespoon onion powder

1 tablespoon garlic powder

2 cups beef broth

12 sprigs fresh rosemary

1 sprig fresh thyme

Salt and pepper to taste


Instructions

  1. Season the beef chunks with salt, pepper, onion powder, and garlic powder. Drizzle with Worcestershire sauce and toss to coat. Coat the beef with 1/4 of the flour.
  2. Heat olive oil in a large pot over medium heat. Brown the beef in batches, making sure each piece is seared on all sides. Once browned, remove the beef and set aside.
  3. In the same pot, sauté the diced onion until translucent. Add the minced garlic and cook for an additional minute until fragrant.
  4. Sprinkle the remaining flour into the pot and stir until the flour is no longer visible, forming a roux.
  5. Pour in the red wine, stirring to loosen any browned bits from the bottom of the pot.
  6. Return the browned beef to the pot. Add the beef broth, rosemary, and thyme. Bring to a simmer.
  7. Reduce the heat to low, cover, and let the mixture simmer for 2 hours, or until the beef is fork-tender.
  8. Remove the rosemary and thyme sprigs before serving. Serve the beef tips over mashed potatoes, rice, or pasta, and enjoy!

Notes

For a vegetarian version, replace the beef with hearty vegetables like mushrooms or eggplant.

Add a chopped chili pepper or a dash of red pepper flakes for some heat.

Stir in a splash of heavy cream during the last 10 minutes of simmering for a creamier sauce.
