Description

These soft, fluffy garlic bread rolls are a delicious combination of warm, homemade dinner rolls packed with aromatic garlic flavor. Brushed with garlic herb butter after baking, they’re the perfect side dish for any meal, or just as a tasty snack!


Ingredients

4 ½ tablespoons unsalted butter

2 tablespoons minced garlic

3 ½ cups + 1 tablespoon all-purpose flour (see notes for measuring)

3 tablespoons chopped fresh parsley

1 tablespoon granulated sugar

2 ¼ teaspoons instant yeast

1 teaspoon fine sea salt

1 cup whole or 2% milk (warmed to 110°F)

1 large egg, room temperature

1 beaten egg for brushing the tops of the rolls

2 tablespoons unsalted butter (for garlic butter)

1 tablespoon minced garlic (for garlic butter)

1 tablespoon chopped fresh parsley (for garlic butter)

Flaky sea salt, for finishing


Instructions

  1. Lightly butter the bottom and sides of a 9×13-inch baking pan and set aside.
  2. In a small pot, melt 4 ½ tablespoons of butter and add the minced garlic. Cook for 1-2 minutes or until fragrant. Remove from heat and allow to cool while preparing the dough.
  3. In the bowl of a stand mixer, combine the flour, parsley, sugar, yeast, and salt. Add the warmed milk, egg, and garlic butter mixture. Using the dough hook, knead on low speed for 10-12 minutes, or until the dough is smooth and slightly tacky. If the dough is too sticky, add one tablespoon of flour at a time until the dough becomes manageable.
  4. Transfer the dough into a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  5. Punch down the dough and divide it into 12 equal portions (about 67 grams each). Roll each piece into a smooth ball. Pinch the seam at the bottom to keep the rolls tight. Place the shaped rolls into the prepared pan.
  6. Cover the rolls with plastic wrap or a kitchen towel and let them rise for 1-2 hours, or until they’ve doubled in size and are touching.
  7. Preheat your oven to 350°F (180°C). Brush the tops of the rolls with the beaten egg wash. Bake for 20-30 minutes, or until the tops are golden brown.
  8. While the rolls are baking, melt 2 tablespoons of butter in a pot and add the minced garlic. Cook for 1-2 minutes until fragrant. Remove from heat and stir in the chopped parsley.
  9. As soon as the rolls come out of the oven, brush them with the garlic butter. Sprinkle with flaky sea salt if desired. Serve warm and enjoy!

Notes

  • Cheese Garlic Rolls: Add shredded mozzarella or parmesan cheese to the dough for a cheesy twist.
  • Herb Butter: Experiment with different herbs like rosemary or thyme for a different flavor in the garlic butter.
  • Spicy Kick: Add a pinch of red pepper flakes to the garlic butter for a spicy version.
