Ingredients
For the Chicken Bites:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
Salt and pepper, to taste
1 teaspoon Italian seasoning
Fresh parsley, chopped (for garnish)
For the Creamy Parmesan Pasta:
12 oz pasta (fettuccine, spaghetti, or your preferred type)
2 tablespoons butter
2 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
½ cup chicken broth
Salt and pepper, to taste
Extra garlic butter (optional, for drizzling)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain the pasta and set aside, reserving a small amount of pasta water.
- Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, seasoning with salt, pepper, and Italian seasoning. Cook for 6–8 minutes until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
- Prepare the Garlic Butter: In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the cooked chicken back to the skillet and toss to coat in the garlic butter.
- Make the Creamy Parmesan Sauce: In another pan, melt the remaining butter over medium heat. Add the garlic and sauté for 30 seconds. Stir in the heavy cream and chicken broth, bringing it to a simmer. Gradually whisk in the Parmesan cheese, stirring until the sauce becomes smooth and creamy. Season with salt and pepper to taste.
- Combine Pasta and Sauce: Add the drained pasta to the Parmesan sauce, tossing to coat the pasta in the sauce. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
- Serve: Plate the creamy pasta and top with the garlic butter chicken bites. Garnish with fresh parsley and drizzle with extra garlic butter if desired.
