Ingredients

For the Chicken:

1 lb boneless, skinless chicken breasts or thighs

2 tbsp olive oil

Salt and pepper, to taste

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp chili powder (optional, for heat)

For the Garlic Butter Sauce:

4 tbsp unsalted butter

4 cloves garlic, minced

2 tbsp honey

⅓ cup BBQ sauce (your favorite variety)

1 tbsp lemon juice (for freshness)

For Serving:

8 small flour or corn tortillas

½ cup shredded lettuce

½ cup shredded cheese (cheddar or Monterey Jack)

¼ cup diced red onion

¼ cup chopped cilantro

Lime wedges, for garnish


Instructions

  1. Season the chicken breasts or thighs with olive oil, salt, pepper, paprika, garlic powder, onion powder, and chili powder (if using).
  2. Heat a skillet over medium heat and cook the chicken for about 6-7 minutes per side, or until fully cooked through and golden brown. Once cooked, remove the chicken from the skillet and set aside to rest.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the honey, BBQ sauce, and lemon juice. Let the sauce simmer for a couple of minutes until it thickens slightly.
  5. Slice the cooked chicken into thin strips and toss it in the garlic butter BBQ sauce until fully coated.
  6. Warm the tortillas in a separate pan or microwave for a few seconds to soften.
  7. Assemble the tacos by placing the coated chicken onto each tortilla, then topping with shredded lettuce, cheese, diced red onion, cilantro, and a squeeze of lime juice.
