Ingredients
For the Chicken:
1 lb boneless, skinless chicken breasts or thighs
2 tbsp olive oil
Salt and pepper, to taste
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp chili powder (optional, for heat)
For the Garlic Butter Sauce:
4 tbsp unsalted butter
4 cloves garlic, minced
2 tbsp honey
⅓ cup BBQ sauce (your favorite variety)
1 tbsp lemon juice (for freshness)
For Serving:
8 small flour or corn tortillas
½ cup shredded lettuce
½ cup shredded cheese (cheddar or Monterey Jack)
¼ cup diced red onion
¼ cup chopped cilantro
Lime wedges, for garnish
Instructions
- Season the chicken breasts or thighs with olive oil, salt, pepper, paprika, garlic powder, onion powder, and chili powder (if using).
- Heat a skillet over medium heat and cook the chicken for about 6-7 minutes per side, or until fully cooked through and golden brown. Once cooked, remove the chicken from the skillet and set aside to rest.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the honey, BBQ sauce, and lemon juice. Let the sauce simmer for a couple of minutes until it thickens slightly.
- Slice the cooked chicken into thin strips and toss it in the garlic butter BBQ sauce until fully coated.
- Warm the tortillas in a separate pan or microwave for a few seconds to soften.
- Assemble the tacos by placing the coated chicken onto each tortilla, then topping with shredded lettuce, cheese, diced red onion, cilantro, and a squeeze of lime juice.
- Serve immediately and enjoy!
Notes
- For extra heat: Add more chili powder or even a few sliced jalapeños to the tacos for a spicy kick.
- Vegetarian option: Replace the chicken with grilled vegetables like zucchini, bell peppers, and onions for a delicious meatless version.
- Add extra toppings: Avocado, sour cream, or a drizzle of ranch dressing can add extra creaminess to balance out the flavors.
- Store the chicken and toppings separately in airtight containers for up to 3 days. Reheat the chicken in a skillet over low heat.
