Vegetables
- ¾ pound baby gold potatoes (about 6 baby potatoes)

Garlic Butter Sauce
- 3 cloves garlic, minced
 - 3 tablespoons butter
 - 6 tablespoons avocado oil (divided)
 - ½ teaspoon sea salt (or more/less, as desired)
 - ½ teaspoon black pepper (or more/less, as desired)
 - Fresh parsley, minced, for garnish
 
Instructions
- Prep: Slice the baby gold potatoes in half and cut the broccoli into bite-sized pieces. Mince the garlic and fresh parsley. Cut the sirloin steak into 2-inch pieces and pat them dry thoroughly with paper towels to remove any moisture. Lightly season the steak pieces with salt and pepper on all sides.
 - Cook the vegetables: Heat 2 to 3 tablespoons of avocado oil in a large cast iron skillet over medium heat. Place the potato halves cut side down in the skillet and cook for 7 to 8 minutes until the cut side is crispy and the potatoes easily release from the pan. Flip the potatoes, add the broccoli florets to the skillet, and cook together for another 7 to 8 minutes until the potatoes are tender and the broccoli is softened. Remove the vegetables from the skillet and transfer to a large plate.
 - Cook the steak: Increase the heat to medium-high and add 2 tablespoons of avocado oil to the same skillet. When the oil is shimmering, add the steak pieces in a single layer. Sear the steak for about one minute per side, turning as soon as each side browns nicely. Remove the steak from the skillet and add it to the plate with the vegetables.
 - Make the garlic butter sauce: Reduce the heat to low. Add the minced garlic, remaining 2 tablespoons of avocado oil, and butter to the skillet. Sauté gently for 3 to 4 minutes until the garlic is fragrant but not browned.
 - Finishing steps: Return the steak and vegetables to the skillet and toss thoroughly to coat everything evenly with the garlic butter sauce. Sprinkle with the minced parsley and adjust seasoning with additional salt and pepper if desired. Serve immediately while hot and flavorful.
