Ingredients
2 tablespoons olive oil
1 lb lean ground beef
1 medium yellow onion, diced
1 red bell pepper, diced
1½ lbs Yukon gold potatoes, peeled and cubed
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon dried oregano
Salt and pepper to taste
2 tablespoons chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon as it cooks.
- Add diced onion and red bell pepper to the skillet. Sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add cubed potatoes, paprika, dried oregano, salt, and pepper to the skillet. Stir well.
- Cover the skillet and cook for 15-20 minutes, stirring occasionally, until potatoes are tender and cooked through.
- Taste and adjust seasoning as needed.
- Garnish with fresh parsley before serving, if desired.
