Description

Ground Beef and Potatoes is a hearty, one-pan meal combining savory ground beef, tender potatoes, and colorful vegetables. A comforting and satisfying dish, perfect for busy weeknights with minimal cleanup. Full of flavor and texture, it’s a family favorite.

Ingredients

2 tablespoons olive oil

1 lb lean ground beef

1 medium yellow onion, diced

1 red bell pepper, diced

lbs Yukon gold potatoes, peeled and cubed

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon as it cooks.
  3. Add diced onion and red bell pepper to the skillet. Sauté until softened, about 5 minutes.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Add cubed potatoes, paprika, dried oregano, salt, and pepper to the skillet. Stir well.
  6. Cover the skillet and cook for 15-20 minutes, stirring occasionally, until potatoes are tender and cooked through.
  7. Taste and adjust seasoning as needed.
  8. Garnish with fresh parsley before serving, if desired.

Notes

  • To add more vegetables, feel free to incorporate carrots, peas, or corn for extra flavor and nutrition.
  • For a spicier version, add a diced jalapeño or a sprinkle of red pepper flakes.
  • If you love cheese, top the dish with shredded cheese in the final minutes of cooking for a cheesy finish.
