Description
Guaczpacho (Guacamole Gazpacho) is a refreshing, chilled soup combining the creamy texture of avocado with the fresh, tangy flavor of tomatoes, cucumbers, and lime. It’s the perfect summer dish with no cooking required.
Ingredients
1 1/2 pounds fresh tomatoes, cored, seeded, and roughly chopped
1 slice of bread, crusts removed, soaked in water for a few minutes
1 cucumber, peeled and seeded
1 clove of garlic, peeled and roughly chopped
1/2 medium avocado, peeled
2 heaping tablespoons red onion, chopped
2 tablespoons fresh cilantro, thick stems removed
Juice and zest from 1/2 lime
1 tablespoon sherry vinegar
1 teaspoon sea salt, plus extra to taste
1/2 cup extra virgin olive oil
Instructions
- Add all ingredients to a high-speed blender or food processor.
- Blend until smooth and well combined.
- Taste and adjust salt as needed.
- For a thinner soup, pour the gazpacho through a coarse sieve, using the back of a spoon to push it through.
- Chill the soup in the refrigerator for at least 2 hours.
- Serve with your favorite garnishes, such as crunchy croutons or fresh herbs.
Notes
- Add a small amount of jalapeño or another chili pepper for a spicy kick.
- Substitute cilantro with parsley or basil if preferred.
- For extra crunch, serve with tortilla chips or roasted pumpkin seeds.
- This recipe is vegan-friendly with no modifications needed.
- Guaczpacho is best enjoyed cold and can be stored in an airtight container for up to 3 days.
