Ingredients
Boneless, skinless chicken breasts (cut into 1-inch cubes)
Pineapple chunks (fresh or canned)
Bell pepper (red or green, cut into 1-inch pieces)
Red onion (cut into wedges)
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons olive oil
2 cloves garlic (minced)
1 teaspoon ground ginger
1/2 teaspoon black pepper
Red pepper flakes (optional)
Wooden or metal skewers (soak wooden skewers if using)
Instructions
- In a large bowl, whisk together soy sauce, honey, olive oil, minced garlic, ground ginger, black pepper, and red pepper flakes (if using) to create the marinade.
- Add cubed chicken to the marinade and coat thoroughly. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.
- Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken, pineapple chunks, bell pepper pieces, and red onion wedges onto the skewers, alternating ingredients.
- Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
