Description
A light and flavorful pasta dish with sun-dried tomatoes, spinach, and a creamy sauce made with Greek yogurt and Parmesan cheese, without the heavy cream.
Ingredients
8 oz penne pasta
2 tbsp olive oil
1 tbsp sun-dried tomato oil (from the tomato jar)
3 garlic cloves, minced
1/3 cup jarred sun-dried tomatoes, chopped finely
1 tsp oregano
1 tbsp tomato paste
1/2 cup chicken broth
1/3 cup Greek yogurt, 2% fat
1/3 cup Parmesan cheese, freshly grated
1/4 cup pasta water
1 cup spinach, roughly chopped
1 tbsp fresh basil, finely chopped
Instructions
- Cook the penne pasta according to the package instructions.
- In a large skillet over medium heat, add the olive oil, sun-dried tomato oil, garlic, sun-dried tomatoes, oregano, salt, and pepper. Sauté for a couple of minutes until the garlic and tomatoes are soft and fragrant.
- Add the tomato paste to the skillet and sauté for about 5 minutes to allow it to caramelize and deepen in flavor.
- Pour in the chicken broth and bring to a simmer. Let it simmer for 3-5 minutes until the sauce begins to thicken.
- Lower the heat and add the Greek yogurt, Parmesan cheese, and pasta water. Stir until smooth and the cheese has fully melted.
- Add the chopped spinach to the skillet and stir until it wilts completely.
- Toss in the cooked pasta, making sure it’s thoroughly coated in the sauce.
- Finish by stirring in the fresh basil and adding salt and pepper to taste.
- Serve and enjoy!
