Ingredients

For the Grilled Steak with Herb Brown Sauce:

8 oz steak, sliced

1 tbsp olive oil

Salt and pepper

1/2 cup beef broth

1 small onion, finely chopped

1 tbsp butter

1 tsp fresh thyme or mixed herbs

1 tbsp flour (optional, for thickening)

For the Spiced Grilled Shrimp:

12 large shrimp, peeled and deveined

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp cayenne pepper

1/2 tsp garlic powder

For the Creamy Mashed Potatoes:

3 large potatoes, peeled and chopped

1/4 cup butter

1/2 cup cream or milk

For the Steamed Asparagus:

1 bunch asparagus, trimmed

For the Pickled Yellow Onions:

1/2 cup thinly sliced yellow onions

1/2 cup white vinegar

1 tbsp sugar

1 tsp salt


Instructions

  1. Prepare the Pickled Onions: In a bowl, combine vinegar, sugar, and salt until dissolved. Add sliced onions and let sit for at least 30 minutes for more flavor.
  2. Cook the Mashed Potatoes: Boil the chopped potatoes in a large pot until tender, about 15-20 minutes. Drain well. Mash with butter, cream (or milk), salt, and pepper until smooth and creamy. Set aside.
  3. Make the Herb Brown Sauce and Steak: Season the steak slices with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak slices to your desired doneness. Remove and keep warm. In the same pan, sauté onions with butter until softened. If using, sprinkle flour over onions and stir in beef broth. Add thyme or mixed herbs and simmer to thicken the sauce. Return steak to the pan and coat with sauce.
  4. Grill the Shrimp: Toss shrimp with olive oil, smoked paprika, cayenne, garlic powder, salt, and pepper. Grill or sauté over medium-high heat until opaque and charred, about 2-3 minutes per side.
