Ingredients
2 cups fresh blueberries
½ cup (120 ml) water
½ cup (100 g) granulated sugar
1 Tablespoon fresh lemon juice
Pinch of salt
2 Tablespoons cornstarch, dissolved in 2 Tablespoons water
½ teaspoon pure vanilla extract
Instructions
- In a medium saucepan over medium heat, add blueberries, water, sugar, lemon juice, and salt. Stir frequently and bring the mixture to a simmer.
- Once simmering, add the cornstarch paste (cornstarch dissolved in water) and stir until fully combined.
- Continue cooking the mixture for about 5 to 7 minutes until it thickens and coats the back of a spoon.
- Remove from heat and stir in the vanilla extract.
- Serve the sauce warm, at room temperature, or chilled. Enjoy it on ice cream, cheesecakes, pancakes, or any dish of your choice!
