Ingredients
For the Chicken Nuggets:
1 lb boneless, skinless chicken breasts or tenders
1 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
½ cup regular breadcrumbs
¼ cup grated Parmesan cheese (optional)
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
1 tsp salt
½ tsp black pepper
For Frying:
Vegetable oil or canola oil (for deep frying)
Optional for Baking:
Cooking spray (to lightly coat the nuggets)

Your favorite dipping sauces (ketchup, ranch, honey mustard, etc.)
Instructions
- Trim excess fat from chicken and cut it into 1-inch cubes.
- Set up a breading station: in one bowl, add flour; in another, whisk eggs; in a third, combine panko breadcrumbs, regular breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
- Coat each chicken piece in flour, dip in the egg mixture, and roll in the breadcrumb mixture, pressing gently to adhere.
- For Frying: Heat oil to 350-375°F. Fry chicken in small batches for 2-3 minutes per side or until golden and cooked through. Drain on paper towels.
- For Baking: Preheat oven to 400°F. Arrange breaded chicken on a parchment-lined baking sheet and spray with cooking spray. Bake for 18-22 minutes, flipping halfway, until golden and cooked through.
Notes
- Double the crunch by dipping the chicken back into the egg mixture and breadcrumbs for extra crispy nuggets.
- For extra flavor, marinate the chicken in buttermilk for 30 minutes before breading.
- For air frying, cook at 400°F for 10-12 minutes, shaking halfway through.
- Storage: Refrigerate leftovers for 3-4 days or freeze for up to 3 months.
