Ingredients

For the Chicken Nuggets:

1 lb boneless, skinless chicken breasts or tenders

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

½ cup regular breadcrumbs

¼ cup grated Parmesan cheese (optional)

1 tsp garlic powder

1 tsp onion powder

½ tsp paprika

1 tsp salt

½ tsp black pepper

For Frying:

Vegetable oil or canola oil (for deep frying)

Optional for Baking:

Cooking spray (to lightly coat the nuggets)

For Serving:

Your favorite dipping sauces (ketchup, ranch, honey mustard, etc.)


Instructions

  1. Trim excess fat from chicken and cut it into 1-inch cubes.
  2. Set up a breading station: in one bowl, add flour; in another, whisk eggs; in a third, combine panko breadcrumbs, regular breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat each chicken piece in flour, dip in the egg mixture, and roll in the breadcrumb mixture, pressing gently to adhere.
  4. For Frying: Heat oil to 350-375°F. Fry chicken in small batches for 2-3 minutes per side or until golden and cooked through. Drain on paper towels.
  5. For Baking: Preheat oven to 400°F. Arrange breaded chicken on a parchment-lined baking sheet and spray with cooking spray. Bake for 18-22 minutes, flipping halfway, until golden and cooked through.

Notes

  • Double the crunch by dipping the chicken back into the egg mixture and breadcrumbs for extra crispy nuggets.
  • For extra flavor, marinate the chicken in buttermilk for 30 minutes before breading.
  • For air frying, cook at 400°F for 10-12 minutes, shaking halfway through.
  • Storage: Refrigerate leftovers for 3-4 days or freeze for up to 3 months.
