Description

A quick and nutritious breakfast or brunch option featuring layers of creamy yogurt, crunchy homemade granola, and sweet roasted strawberries. Topped with fresh fruit and a drizzle of honey, this parfait is customizable to your taste.

Ingredients

2 cups yogurt of your choice (Greek, Icelandic Skyr, vanilla, fruit-flavored, plant-based… anything goes!)

2 cups homemade cardamom granola with almonds or store-bought granola

1 ½ cups sweet and simple roasted strawberries or another fruit compote or just fresh fruit

1 cup sliced fresh strawberries or other berry or fresh fruit of your choice

Honey for drizzling

Instructions

  1. Spoon a layer of yogurt into the bottom of a serving glass or bowl.
  2. Add a layer of roasted strawberries over the yogurt.
  3. Follow with a layer of granola on top of the strawberries.
  4. Repeat the layers one more time if desired for extra richness and texture.
  5. Finish with a final dollop of yogurt, a generous amount of sliced fresh strawberries, and a drizzle of honey for added sweetness.

Notes

  • Fruit: Use fresh fruit like blueberries, raspberries, or peaches for variation. A mix of berries works well.
  • Granola: Swap the homemade cardamom granola with almonds for store-bought granola or any granola flavor you prefer.
  • Yogurt: Choose from Greek yogurt, Icelandic Skyr, or plant-based options like coconut or almond milk-based yogurt.
  • Sweeteners: Use maple syrup or agave instead of honey for a different sweetness profile.
  • Add-ins: Boost the parfait with chia seeds, flax seeds, or extra nuts for added healthy fats and fiber.
