Description
Jelly Bean Sugar Cookies are soft, buttery, and a fun twist on traditional sugar cookies. With their colorful jelly beans and a festive touch, these cookies are perfect for holidays, springtime, or any special occasion.
Ingredients
1 and 1/2 cups (188g) all-purpose flour (spooned & leveled)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar
1 large egg, at room temperature
1/2 teaspoon almond extract
1/2 teaspoon pure vanilla extract
1 bag jelly beans
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and granulated sugar together on medium-high speed until creamy (about 1 minute). Add the egg, almond extract, and vanilla extract. Beat until combined (about 1 minute). Scrape down the sides of the bowl, then beat again if needed.
- Gradually add the dry ingredients to the wet ingredients and mix on low until the dough comes together. The dough will be thick and slightly sticky.
- Scoop out about 1 tablespoon of dough and roll it into balls. Arrange the dough balls on a large plate or lined baking sheet.
- Cover and chill the dough balls in the refrigerator for at least 1-2 hours (up to 4 days).
- Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper or silicone baking mats.
- Place the chilled dough balls 3 inches apart on the prepared baking sheets. Bake for 10-12 minutes or until the sides are lightly browned. The centers should still look soft.
- Remove the cookies from the oven and let them cool on the baking sheet for 3 minutes. While still warm, press a few jelly beans into the center of each cookie.
- Transfer the cookies to a wire rack to cool completely.
Notes
- Chill the dough to prevent cookies from spreading too much during baking. Skipping this step may result in thinner cookies.
- Use any candy you like instead of jelly beans, such as M&Ms or chocolate chips.
- Roll the dough balls in sugar before chilling them for a sparkly finish.
- If you’re not a fan of almond extract, you can substitute it with more vanilla extract or another flavoring.
