Description

Jimmy Carter’s Grandmother’s Peanut Butter Cookies are a nostalgic and comforting treat, offering rich peanut butter flavor in every bite. Easy to make with simple ingredients, these cookies are perfect for any occasion.

Ingredients

1 cup creamy peanut butter

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Mix until well blended.
  3. Add the eggs and vanilla extract, and beat until smooth.
  4. In a separate bowl, whisk together the baking soda, salt, and flour.
  5. Gradually add the dry ingredients to the peanut butter mixture, stirring until just combined.
  6. Scoop tablespoon-sized balls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  7. Use a fork to flatten each cookie slightly and create a crisscross pattern on top.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

  • For a chocolate chip twist, add 1/2 cup of chocolate chips to the dough.
  • Add 1/2 cup of chopped nuts, like walnuts or pecans, for a nutty delight.
  • Substitute half the all-purpose flour with whole wheat flour for a nuttier taste.
  • Replace vanilla extract with maple extract for a unique maple flavor.
  • Use gluten-free flour to make these cookies suitable for gluten-sensitive individuals.
  • Store cookies in an airtight container at room temperature for up to a week. Freeze for up to 3 months for longer storage.
