Ingredients

36 skinless, boneless chicken thighs

1 pound (450g) green beans, trimmed

3 tablespoons butter (divided) or ghee (for paleo diet)

4 garlic cloves, minced

1 teaspoon paprika

1 teaspoon onion powder

1/4 teaspoon salt

Fresh cracked black pepper, to taste

Juice of 1/2 lemon + lemon slices for garnish

1/2 cup (125ml) chicken stock

1 tablespoon hot sauce (e.g., Sriracha)

1/4 teaspoon crushed red chili pepper flakes (optional)

1/2 cup fresh chopped parsley


Instructions

  1. Prepare the Chicken:
    Pat the chicken thighs dry with a paper towel to remove excess moisture, ensuring they brown properly.
  2. Season the Chicken:
    In a small bowl, combine the onion powder, paprika, salt, and pepper. Rub the seasoning mixture generously over the chicken thighs. Set aside.
  3. Cook the Green Beans:
    Arrange the green beans in a microwave-safe dish with 1/2 cup of water. Cook in the microwave for 8-10 minutes until almost done but still crisp.
  4. Cook the Chicken:
    Heat a large cast iron skillet over medium-low heat and melt 2 tablespoons of butter. Place the seasoned chicken thighs top side down and cook until golden, about 5-6 minutes. Flip the chicken and cook for another 5-6 minutes until cooked through (internal temperature of 165°F or 75°C). Transfer chicken to a plate and set aside.
  5. Sauté the Garlic and Green Beans:
    In the same skillet, lower the heat and melt the remaining tablespoon of butter. Add garlic, hot sauce, red chili pepper flakes (optional), and pre-cooked green beans. Cook for 4-5 minutes, stirring regularly, until the green beans are cooked to your liking.
  6. Make the Sauce:
    Add lemon juice and chicken stock to the pan, reducing the sauce for a couple of minutes until it thickens slightly.
  7. Reheat the Chicken:
    Push the green beans to the side of the skillet and return the chicken to the pan to reheat in the sauce. Adjust seasoning with additional pepper.
  8. Serve:
    Garnish with fresh parsley, crushed chili pepper flakes, and lemon slices. Serve the lemon garlic butter chicken thighs warm.
