Ingredients
Lemon Poppy Seed Loaf:
1½ cups (190g) all-purpose flour
1 tbsp poppy seeds
1½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup (115g) unsalted butter, softened
¾ cup (150g) granulated sugar
2 large eggs
1 tbsp lemon zest
2 tbsp fresh lemon juice
1 tsp vanilla extract
½ cup (120ml) buttermilk or yogurt
Lemon Glaze:
1 cup (120g) powdered sugar
1½–2 tbsp fresh lemon juice
Topping (Optional):
Lemon slices
Extra poppy seeds
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt.
- In a separate large bowl, beat the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest, lemon juice, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
- Pour the batter into the prepared loaf pan and spread it evenly. Bake for 45–55 minutes, or until a toothpick inserted comes out clean.
- Let the loaf cool completely on a wire rack.
- For the glaze, whisk together the powdered sugar and lemon juice until smooth. Once the loaf is cooled, drizzle the glaze over the top.
- Optional: Garnish with fresh lemon slices and a sprinkle of extra poppy seeds.
