Description

These McGriddle Bites are a delicious, bite-sized breakfast treat combining fluffy pancakes, savory breakfast sausage, melted cheddar cheese, and a touch of maple syrup. Perfectly baked in mini muffin tins, they offer a convenient and flavorful way to enjoy the classic McGriddle flavor in snackable form.

Ingredients

Dry Ingredients

  • 2 cups Hungry Jack Pancake Mix

Wet Ingredients

  • 1 1/2 cups water
  • 1/4 cup maple syrup

Other Ingredients

  • 1 lb breakfast sausage
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the sausage: In a skillet over medium-high heat, cook the breakfast sausage until browned and fully cooked. Drain the excess grease thoroughly and set the sausage aside to cool slightly.
  2. Prepare the pancake batter: Mix the Hungry Jack Pancake Mix with 1 1/2 cups of water according to package directions to create a smooth batter.
  3. Combine ingredients: Stir the cooked sausage, shredded cheddar cheese, and 1/4 cup maple syrup into the prepared pancake batter until evenly distributed.
  4. Bake the bites: Grease a mini muffin pan to prevent sticking, then pour the batter mixture evenly into the muffin cups. Bake in a preheated oven at 400°F (204°C) for 12–15 minutes until the bites are puffed and golden brown.
  5. Serve and enjoy: Remove the McGriddle Bites from the oven and allow to cool slightly. Serve them warm with additional maple syrup for dipping.

Notes

  • Drain the sausage grease thoroughly to avoid greasy bites.
  • Grease the mini muffin pan well to ensure easy removal.
  • Adjust baking time slightly depending on your oven and muffin pan size.
  • For a spicier version, consider using a spicy breakfast sausage or adding a pinch of cayenne pepper to the batter.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven for best texture.
