Ingredients
500g ground beef
1 medium zucchini, sliced
1 cup cherry tomatoes, halved
1 small red onion, sliced
1 small yellow onion, sliced
2 cloves garlic, minced
100g feta cheese, crumbled
2 tbsp olive oil
Salt and pepper to taste
1 tsp dried oregano
Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes).
- Add the sliced zucchini, red onion, yellow onion, and garlic to the skillet. Stir well and cook for 3-5 minutes, until the vegetables are tender.
- Add the cherry tomatoes, salt, pepper, and dried oregano. Stir to combine, cooking for another 2-3 minutes until the tomatoes begin to soften.
- Remove the skillet from heat and stir in the crumbled feta cheese.
- Garnish with fresh parsley before serving.
