Description
Mediterranean Quesadillas combine the warm, crispy comfort of quesadillas with fresh Mediterranean flavors. Filled with spinach, feta, olives, and herbs, this quick and healthy meal is a perfect twist on a classic favorite.
Ingredients
2 large whole wheat tortillas
1 cup cooked spinach, chopped
1 cup cherry tomatoes, halved
1 cup feta cheese, crumbled
1/2 cup black olives, sliced
1/4 cup red onion, finely chopped
1 teaspoon dried oregano
1 teaspoon garlic powder
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped spinach and red onion, sautéing for about 2-3 minutes until the onion becomes translucent and the spinach wilts.
- In a mixing bowl, combine the sautéed spinach mixture with halved cherry tomatoes, crumbled feta, sliced black olives, oregano, garlic powder, salt, and pepper. Mix well.
- Place one tortilla in the skillet. Spread half of the filling mixture evenly over one half of the tortilla. Fold the other half over the filling.
- Cook for 3-4 minutes until the bottom is golden brown. Flip the quesadilla carefully and cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.
- Remove from the skillet, let it cool for a minute, then cut into wedges. Garnish with fresh parsley and serve. Repeat with the second tortilla and remaining filling.
