Description

Mediterranean Quesadillas combine the warm, crispy comfort of quesadillas with fresh Mediterranean flavors. Filled with spinach, feta, olives, and herbs, this quick and healthy meal is a perfect twist on a classic favorite.


Ingredients

2 large whole wheat tortillas

1 cup cooked spinach, chopped

1 cup cherry tomatoes, halved

1 cup feta cheese, crumbled

1/2 cup black olives, sliced

1/4 cup red onion, finely chopped

1 teaspoon dried oregano

1 teaspoon garlic powder

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped spinach and red onion, sautéing for about 2-3 minutes until the onion becomes translucent and the spinach wilts.
  2. In a mixing bowl, combine the sautéed spinach mixture with halved cherry tomatoes, crumbled feta, sliced black olives, oregano, garlic powder, salt, and pepper. Mix well.
  3. Place one tortilla in the skillet. Spread half of the filling mixture evenly over one half of the tortilla. Fold the other half over the filling.
  4. Cook for 3-4 minutes until the bottom is golden brown. Flip the quesadilla carefully and cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.
  5. Remove from the skillet, let it cool for a minute, then cut into wedges. Garnish with fresh parsley and serve. Repeat with the second tortilla and remaining filling.
