Description

These no-bake Mint Chocolate Chip Protein Balls are a quick, refreshing, and protein-rich treat—perfect for healthy snacking or a nutritious dessert.


Ingredients

1/2 cup (50g) rolled oats

1 cup (240g) almond butter

2 tbsp (42g) honey

1/4 cup (30g) vanilla protein powder

1/4 tsp peppermint extract

1/4 cup (40g) mini dark chocolate chips

12 tbsp (15–30ml) unsweetened almond milk, as needed


Instructions

  1. In a large bowl, mix rolled oats, almond butter, honey, protein powder, and peppermint extract until well combined.
  2. If the mixture is too dry, add almond milk one tablespoon at a time until sticky and moldable.
  3. Fold in the mini dark chocolate chips.
  4. Scoop out 1 tablespoon of the mixture and roll into a ball. Repeat until all mixture is used.
  5. Place balls on a parchment-lined baking sheet and refrigerate for at least 20 minutes until firm.

Notes

  • To make vegan, substitute honey with maple syrup.
  • If mixture is too sticky, chill it for 5–10 minutes before rolling.
  • Adjust peppermint extract to your flavor preference.
  • Add chia seeds or ground flax for an extra nutrient boost.
